Wonderful Sardines! Here in lovely colours.
1- In a bowl, place the sardines with some crushed garlic, grated fresh ginger root, crushed black pepper and lemon juice. Let it stand for about 15 minutes covered while you prepare the other ingredients and the table.
2- Add sliced cherry tomatoes and cubes of mango (peaches works well if you do not have mango in your area).
3- Sprinkle with fresh mint leaves and serve immediately with fresh baguette.
