Mango muffins with cardamon

A delight of colour and taste!


For 12 muffins
1- Melt 40 gr of high quality butter and let it cool.
2- In a large bowl, mix: one and half cups of sifted flour, a generous tablespoon of brown sugar, a tablespoon of baking powder and the seeds of seven cardamon pods slightly crushed.
3- Add a pot of heavy cream (220 ml) and two eggs. Mix well. Then add the butter and mix again.
4- Add three medium size mangos (preferably the ones without fibre such as “manilla” in Mexico) cut in small pieces. Mix again.
5- Fill the muffin tray and bake for 30 minutes in a 275 º c. oven.
