Clafoutis aux fraises

It is strawberry season!

You can use any red fruits that you desire (raspberries, gooseberries, etc.), but this one I made with strawberries and left them whole!

For 500 gr of organic strawberries
1- Wash the strawberries well and let them soak for five in water mixed with a little bit of lemon juice. That will insure they are totally clean.
2- Place them in a bowl with 40 gr of sugar and mix. Let them stand while you make the rest of the preparation.
3- In a large bowl, mix 100 gr sifted flour, a pinch of salt and 40 gr of sugar. Then add two eggs and 20 cl of cold milk. Mix well and make sure that there are no lumps. At the very end, add the liquid that has been released by the strawberries and sugar, and mix again. (do not use a mixer, just do it gently)
4- Place the strawberries in a prepared baking dish (buttered and sprinkled with flour). Pour the egg mixture and bake for 30 min in a 200ºc oven. This recipe also works if you want to use individual ramequins.

Let the clafoutis cool completely before serving. It is delicious eaten cold!
