Wonderfully light quiche without dough, perfumed with fresh homegrown cilantro. Perfect for a light lunch or dinner.
1- In a large bowl mix: three organic eggs, 100 gr of sifted flour, 50 cl of cold milk (half a litre), salt and pepper.
2- Add a bunch of fresh organic cilantro cut with scissors (so that all the aroma remains). 3- Place the mix in an oven dish and cover with grated Parmiggiano (what I used) or Gruyère.
4- Bake for 40 minutes in a 180ºC. oven.
I served it with a lovely organic yellow tomato salad sprinkled with lemon juice, olive oil and fresh mint (also homegrown).
