Mandarine and ginger sauce

A slightly sweet and sour sauce, called “aigre-doux” in French, that can be made at the very last minute to accompany fish, chicken or vegetables.  It is delicious!

1- Mix the juice of two mandarines with some fresh ginger root grated, freshly ground pepper and half a tablespoon of brown sugar.
2- Place in a pan and let it boil for about five minutes mixing it from time to time. Serve immediately.
