Chinese fish with scallions

Easy and filled with flavours. A friend of mine made this dish for lunch at our home.

For a large filet of white fish
1- Place water in a deep pan and let it boil. Add the fish and cover. Let it cook until the fish is flaky – about 15 minutes.
2- Meanwhile place some sesame oil in a frying pan, add shredded fresh ginger root, chopped garlic, the green part of the scallions cut in strips, and sprinkle with soya sauce. Let it fry on high fire for about five minutes.

To serve, place the fish on a plate and cover with the scallion mixture. We served it with white rice and sautéed spinach with garlic.
