A delight thanks to a touch of yoghurt.
For twelve muffins:
1- Melt 40 gr of high quality butter and let it cool.
2- In a large bowl mix: one and half cup of sifted flour, one large tablespoon of baking powder, half a cup of brown sugar, two eggs and a cup of plain yoghurt. Mix well.
3- Add the melted butter.
4- Add three mangos cut in small cubes – preferably the “manila” type, without fibre.
5- Place in a muffin pan and bake for 25 minutes at 175º C.
