Apricot jam with brown sugar

I try to avoid white sugar as much as possible and only use it for making jam. This time I tried making jam with brown sugar and the result was delicious! The jam comes out a little darker than usual yet just as good.

1- For one kilogram of apricots: wash the apricots, cut in half, take out the pits and cut agin in quarters if the apricots are large.
2- In a large cooking pan, place the apricots along with 600 gr of brown sugar.Mix then let it stand for one to two hours covered.
3- Place on medium heat until it starts to boil. During that time, mix gently so that the sugar does not stick to the bottom of the pan.
4- Bring down the heat to very low and let it simmer for about 25 minutes. Mix very gently about three times during the process so as not to break the fruits.
5- Once it is done, immediately place the jam in tightly closed glass containers. Let it cool down then place in the fridge. The jam is ready 24 hours later.
