Petit clafoutis à l’abricot

Simply perfect for the season, colour, taste and all!


For one kg of fresh apricots:
1-Melt 20 gr of butter and let it cool. Set aside.
2- In a large bowl, mix 3 eggs with 2 tablespoons of brown sugar until all the sugar has dissolved.
3- Add 1 cup of milk, 4 tablespoons of flour and a pinch of salt.
4- In a prepared baking dish (buttered and floured), place the apricots cut in half with the open face down.
5- Add the melted butter to the egg mixture and pour on the apricots.
6- Bake for 45 min in a medium oven (160 ºC).

Serve cold.
