Incredibly fluffy! They will be my son’s morning snack for school this week.
For 12 muffins:
1- Mix in a large bowl: one and half cup of sifted flour, one tablespoon of baking powder, two tablespoons of brown sugar, one cup of heavy cream, three organic eggs and one tablespoon of olive oil. Mix well.
2- Add at the very end about 250 gr of organic strawberries cut roughly. Do it immediately before placing the dough in the muffin baking dish so that the strawberries do not sink into the dough.
3- Bake for 25 minutes in a 175º C. oven.
