Winter apples with dates and apricots

A delicious Ayurveda inspired desert or afternoon snack filled with vitamins and spices that will make you feel warm inside.

For four small organic apples
1- Soak six dried apricots sliced in warm water for about 10 minutes.
2- Meanwhile, peal and cut the apples in cubes or slices.
3- Place the apples in a pan along with: four dates pitted and sliced, one tablespoon of fresh ginger root grated, half a stick of cinnamon, the seeds of seven cardamon pods and one generous tablespoon of brown sugar (you can replace it with maple syrup but not with honey as it would dry up the dish).
4- Add the soaked apricot slices along with two cups of water.
5- Bring to a boil and mix a little. Lower the fire and let it simmer for 10 to 15 minutes. Discard the cinnamon.
6- Take half of the content with a little bit of liquid and smash until getting a smooth consistency – I generally do not use a blender as I feel it harms the goodness one tries to imbue in the food while cooking.
7- Place the mash part in an oven baking dish, or individual ramekins, and place the rest of the fruits on top. Add a little bit of the remaining liquid.

Serve hot immediately, or reheat covered in a medium oven.  

[Note: you can dilute the remaining liquid or mix some with tea and it is delicious!]
