Muffins à la banane et au cacao

Delicious – made with 100% cacao powder and very sweet, and very small, Dominican bananas.

For twelve muffins
1- In a large bowl mix: two cups of sifted flour, 40 gr. of pure cacao powder (unsweetened and with no additives), one tablespoon of baking powder, one pot of cream (250 ml), three tablespoons of brown sugar and two whole organic eggs.
2- Mix well then add three Dominican bananas crushed.
3- At the very end, mix in 40 gr of melted butter (slightly cooled). (I do not use an electric beater. I suggest you use a spatula for the entire mixing process.)
4- Place in a muffin baking pan and bake for 25 minutes in a 175º C. oven. Take the muffins out of the pan as soon as they are baked, and cool before serving.
