Delicious! And with a super thin crust. It only takes 10 to 15 minutes in the oven.
For the crust (makes one medium pizza)
1- In a small bowl mix 4 gr of Baker’s Yeast with 3 cl of water. Mix and let it stand for 15 minutes while you prepare the rest of the ingredients.
2- In a large bowl, place 200 gr of sifted flour (two cups – I mixed one cup of whole wheat with one cup of white flour) with a teaspoon of salt. Mix well with a large wooden fork or spoon.
3- Mix the Baker’s Yeast preparation with the flour and add one tablespoon of olive oil. Mix well with the wooden spoon and add about 10 cl of water. (The water should be at room temperature).
4- Cover with a pot cover and some towels so that it stays warm. Let it stand for at least two hours.
For the sauce
(It is better not to make it I advance so that the tomatoes remain sweet.)
1- In a pot, place one kg of tomatoes, washed and cut in large cubes, with some olive oil. Keep the skin, it has many of the vitamins.
2- Add garlic, freshly crushed pepper and herbs (oregano, basil or mint, or a mix – use fresh herbs).
3- Mix well and let it cook on medium fire for 15 minutes. Do not add salt or it would become too watery.
1- Preheat the oven at 250º C. It has to be very hot.
2- Place the dough on a baking pan, spread the tomato sauce and place slices of fresh Mozzarella di Buffalo.
3- Bake in the lower part of the oven for 15 minutes.
When the Pizza is baked, sprinkle with a few drops of high quality Olive Oil and serve immediately.
