A wonderful recipe I sort of put together -the cream makes all the difference.
1- In a large bowl mix well: one and half cup of sifted flour, half a cup of sifted whole wheat flour, half a cup of brown sugar, a pinch of salt, a tablespoon of baking powder, 200 ml of crème fraîche (you can use heavy cream as a substitute) and three eggs. I like to do it by hand.
2- Mix in three or four Dominican bananas (these are the very small ones — if not available, just use two large ones), smashed thoroughly.
3- Pour the mixture in a prepared baking pan (lined with a little bit of butter and flour). And bake for 50 minutes in a 175º C. oven. Take out of the pan as soon as it is baked.
Serve at room temperature, preferably with homemade jam.
