Clafoutis à la pomme et canneberge

This clafoutis came out so good and so pretty! Perfect for the season with apples and cranberries. I used small organic apples, and it helped give some natural sweetness, balancing the tart taste of cranberries.


For one kilogram of apples and a generous cup of cranberries
1- In a large bowl, whisk by hand three whole organic eggs with three tablespoon of brown sugar.
2- Then add one at time whisking thoroughly four tablespoons of flour, a pinch of salt and one cup of milk.
3- Butter and flour a baking pan, place the apples pealed and cut in large chunk and sprinkle with cranberries.
4- Pour the egg based liquid on top, and bake for 45 minutes in a 160º C oven.

Serve at room temperature or cold.
