Hachis parmentier

Hachis Parmentier – my comfort food… and a very French tradition. Here, with a pot of Chile Chipotle, not very French yet most comforting as well.


1- In a large bowl, mix about 500 gr of high quality ground beef with crushed garlic, fresh crushed pepper and fresh herbs (parsley, rosemary, or any fresh one you may have at hand). Place the ground beef in a large pan with a little bit of olive oil, and cook over medium fire, mixing it constantly. Put aside. (You can add salt once it is cooked.)
2- Boil four to five large potatoes with the skin (the skin contains 50% of the potato´s vitamins) until soft. Let them cool, peel then mash them sprinkling with milk to make the mixture smooth.
3- In an oven dish, place the meat, add the mash potatoes, then sprinkle generously with a mix of grated Gruyère and Parmigiano.
4- Place under the broiler until the top is crispy and golden.
Serve with a green salad.
