Biscuits au chocolat noir et fleur de sel

Delicious! Cookies with dark chocolate and “fleur de sel”. These are really easy to make and take little time. And since they have no eggs, the dough can be kept up to four days in the fridge.

For about 20 cookies: 
1- In a bowl mix: 180 gr of flour, 30 gr of unsweetened pure cocoa powder and 5 gr of baking powder.
2- In a larger bowl: mix with a mixer on low speed 120 gr of butter (softened – leave it out of the fridge for an hour before starting the recipe), 120 gr of brown sugar, 50 gr of granulated sugar and 3 gr of “fleur de sel”.
3- Once the above is well blended, add the flour mix one tablespoon at a time. Make sure each time the flour mix is well incorporated. Use the mixer on low speed and scrape the sides of the bowl from time to time.
4- Add 155 gr of high quality unsweetened dark chocolate (at least 70% cocoa content).
5. With your hand make one of a few rolls and cut the cookies. You can make some in various shapes with a cookie cutter if you prefer.
6- Bake for 11 minutes in a 170ºC oven. Remove once the cookies have cooled.
