Between chips and fries

I made these lovely potatoes with baby potatoes and they came out delicious.

1- Slice baby potatoes (keep the skin, it contains 50% of the vitamins) and wash in cold water. Wash until the water is clear, so that all the starch is gone.
2- Dry in a towel very well and leave them covered for 10 minutes.
3- Fry in olive oil a few batches at a time making sure they do not stick to each other.
4- Pat dry after frying and sprinkle with sal di mare.
