Egg salad – fig & lemon style

This is how we make egg salad sandwich at home. I avoid mayonnaise at all cost, except if home made, and well since this recipe is supposed to be fast and easy, it defeats the purpose. So here is a nice alternative.


1- Hard boiled eggs, some Dijon Mustard and a dash of Madras curry and sea salt. Mix well with a fork. Leave some nice egg pieces, you want the mix to stay solid.
2- Place in toasted whole wheat bread, cut the crust and serve with a green salad.
