Pomegranate and cardamom muffins

Bringing the flavors of Afghanistan to a most Western treat. And it is pomegranate season here in Mexico!


1- Separate the seeds of two pomegranates. Use one and half for the muffins, and the rest for serving.
2- In a large bowl mix with a spatula: two cups of sifted flour, one tablespoon of baking powder, a pinch of salt, the seeds of three cardamom pods, two tablespoons of honey, two eggs and one cup of milk.
3- Add one fourth of a cup of butter (about 50gr) melted and cooled.
4- Mix in gently the pomegranate seeds at the very end.
5- Bake for 20 min in a medium oven (170 degrees C.).
