Mediterranean red snapper in an oven pot

A nice and easy recipe with wonderful flavours. All you need is a large oven pot with a lid, and a little bit of milk…

For two large filets of red snapper.
1- In the pot, place some olive oil, ginger root grated, fresh garlic, fresh rosemary and a little bit of cumin. Add half a cut of milk and mix.
2- Add four large tomatoes cut in large chunks, two lemons sliced and the fish filets cut roughly in three pieces each. Mix gently so all is well covered.
3- Place in a 180º C. oven and bake covered for 45 minutes without stirring.

I served it with white basmati rice and a salad of heart of palms on the side.
