Bright colours and the delicate taste of sunshine.
For two fresh filets of white fish (I used Bass)
1- In a baking pan, place some olive oil, three garlic cloves sliced, a red onion sliced, some ripe tomatoes sliced, green olives cut in half, one lemon cut in half then in thin slices, freshly crushed pepper and a mix of fresh herbs. I used thyme, rosemary and oregano. Mix gently so that all is well coated.
2- Place the fish filets in the dish with some of the mixture under it, and some more above. Cover with aluminum foil.
3- Bake in a medium hot oven (180 degrees C.) for about 40 minutes. Mid way, mix a little the mixture under and over the fish to moisten it.
– I served it with Basmati rice cooked with raisins.
