Here, a simple fish recipe made in this case with flounder and a few simple Mediterranean ingredients.
1- In a deep sauce pan, place some olive oil and fry some crushed garlic and fresh grated ginger root.
2- Add cherry tomatoes cut in half. Once they start to let go of their juices, add the fish cut in cubes, some fresh mint, ground pepper, a little bit of cumin, turmeric and grated cinnamon. Mix gently.
3- Add a few slices of preserved lemons (if you don’t have any, just use regular lemons), and mix again gently so that the fish does not break.
4- Cover and let it cook gently on very low fire for about 15 minutes. It’s done!
I served it with an organic green salad topped with sesame seeds, lemon juice and olive oil, along with slices of three-grain honey bread.
