Hard boiled egg

Here a little recipe to make the perfect hard boiled egg.


1- Place the eggs in cold water in a pan. The water should just about cover the eggs. Ideally, they should be very close together so that they don’t wobble and break.
2- Bring the water to a boil.
3- Once the water is boiling, shut-off the stove and cover the pan. Let the eggs stand in the water for 15 minutes.
4- After 15 minutes, take the eggs out of the water and let them cool on the counter (not in the fridge) so that they are easier to peel.
Use them in salads, as a side dish, or as here, simply with toast spread with Dijon mustard and a lettuce salad with a light dressing of Dijon vinaigrette. They make a most delightful and colourful light meal.
