Salmon with a green olive, garlic and herb sauce. The mix of flavors and colors is wonderful.
1- In a large pan (with a lid), put a few drops of oil and fry gently some crushed garlic, pitted green olives cut in half (here I used green Sevilla olives, you can mix colors and kind), some freshly ground pepper and herbs (oregano, thyme, rosemary).
2- Once the garlic starts giving its aroma, place the salmon filets and a little bit of water in the pan. Cover with the lid and let it simmer for about 10 minutes. Do not turn the filets, they cook evenly thanks to the lid and the water evaporating.
Serve immediately. I served it with white rice mixed with raisins and dried cranberries, and a simple lettuce and avocado salad.
