Lentils from Aleppo

Cooking a delicious lentil dish from Aleppo (Syria) – praying with each turn of the spoon for the madness to stop…


1- In a deep pan, place some olive oil, crushed garlic, cumin, salt and pepper. Fry while stirring until the flavors are released.
2- Add one cup of small brown lentils, thoroughly washed in cold water. Mix until they are well coated.
3- Add water until covering the lentils and cook on a medium fire. Add water as the cooking goes along if you see it is drying.
4- Add the juice of one lemon about 10 minutes before it is ready.
Serve topped with fresh cilantro and place some parted lemons (or lemon juice) on the table. I like to add hot chili peppers (like Chipotle) and accompany the lentils with white rice and a simple salad of lettuce and cherry tomatoes with an olive oil and lemon juice dressing.
