An easy dish inspired from India, filled with subtle flavours.
For two white fish filets
1- Marinate the fish filets in a mix of one pot of plain natural yoghurt, two teaspoons of curry powder (preferable Madras curry), three garlic cloves crushed, fresh mint leaves and a few basil leaves. Let it rest for about 15 minutes covered.
2- Place in the oven and bake for 20 minutes.
3- Take each fish filets delicately and cover with sesame seeds then fry for about three to five minutes each side. It will quickly take on a golden color.
To serve: top with fresh “Manilla” mangos (the sweetest kind and without fibre) accompanied by white Basmati rice with raisins.
