Salade de Sardines du jour

Today’s sardine salad. Full of colours and vitamins.

In a large bowl toss: one can of high quality sardines (the ones in olive oil, discarding the oil), two hard boiled eggs chopped roughly, one large cucumber cut in cubes, one large sweet mango cut in cubes, a handful of dried cranberries, a little bit of sesame seeds, some fresh mint and a dash of balsamic vinegar.

Serve with baguette.
