Very light and very delicate.
1- In a bowl mix at high speed three egg yorks and three tablespoons of brown sugar. Mix until it turns a pale yellow. (If you prefer to use white granulated sugar, use six tablespoons.)
2- Mix in 400 gr of fromage blanc – if you cannot find any, just use this recipe by mixing 250 gr of natural yoghurt with 150 gr of cream cheese. Mix until the texture is smooth. Then add 70 gr (about three quarters of a cup) of flour. Mix again until it is smooth.
3- In another bowl, mix the three egg whites stiff.
4- Fold the egg whites delicately in the larger mixture.
5- Brush a little bit of olive oil in a baking pan, powder with flour and pour in the mixture. Bake for 40 minutes in a 180º C. oven. Let it cool thoroughly for at least an hour before serving.
