Pizza with fresh tomatoes and rosemary

A very simple pizza with fresh ingredients.

For the dough 
1- In a large bowl using a large wooded spatula or pasta mixing fork, mix one at the time: three and half cups of flour, two coffee spoons of salt, one pack of Baker’s yeast, three tablespoons of olive oil, then 25 cl (250 ml) of tepid water slowly.
2- Once it is well mixed, cover with a clothe and set aside in a warm place for one hour.
3- Take out the dough and knead it as you would bread for about 10 minutes. Place it on your baking dish and make a few marks with a fork.


For the topping
1- While the pizza dough is rising, cut five medium tomatoes in slices and place in a bowl.
2- Add five cloves of garlic sliced, some fresh rosemary, salt & pepper, and some olive oil. Mix well and set aside.


The pizza
1- Place the tomato mix with as little liquid as possible on the pizza dough and sprinkle with a generous amount of Parmigiano cheese (use fresh “real” cheese).
2- Bake for about 45 minutes in a 180º C. oven.

Serve immediately with a side of green salad. Careful the tomatoes will be very hot!
