These are just delightful for breakfast or afternoon tea or coffee. Best served with homemade jam or honey.
1- In a large bowl, mix one and half cup of sifted flour, a pinch of salt, one and half teaspoon of baking powder, a drop of vanilla, half a cup of homemade jam, one quarter cup of milk, one whole egg and one third of a cup of melted and cooled butter.
2- Beat two egg whites stiff and gently fold in the above mixture.
3- Place in a muffin baking rack and bake for 25 minutes at 180 degrees C.
