Tacos de camarón! – topped with avocado, cream and chile chipotle.
1- In a large pan, place some olive oil and crushed garlic. Sauté some boiled shrimp and keep mixing on high fire for about 3 minutes. Set aside.
2- In the same pan, add some fresh peeled tomatoes cut in slices, fresh pepper and a generous amount of freshly chopped cilantro. Let it cook on high fire mixing constantly for about 10 minutes. Some of the juice will evaporate but do not let the mixture dry.
3- Add the shrimp and toss again on high fire for just 2 minutes, or until all is well coated.
To serve: On a plate, place warm corn tortilla, put the shrimp mixture, a few pieces of diced avocado, a teaspoon of heavy cream and some chile chipotle.
