Salad with sardines and mango

A wonderful salad filled with protein and perfect for warm days. The temperature reached 29º C. today in San Miguel, under a deep bleu sky.

In a large bowl toss: one can of sardines (high quality olive oil sardines), two hard boiled eggs with the yolk still a little bit soft, one cucumber cut in cubes, one avocado cut in cubes, one sweet mango cut in cubes, an inch of fresh ginger root grated, fresh mint, a tablespoon of Balsamic vinegar and the juice of two limes.

Serve with fresh bread.
