Gâteau au chocolat aux petits beurres

This wonderful recipe by Cook & Fun inspired me to make this absolutely delicious chocolate cake! Perfect for the day of “love and kisses to mama” as my son calls Valentine’s day! (In Mexico, it is called “el día del amor y de la amistad” – “the day of love and friendship.”)

1- Melt au bain marie 200 gr of high quality dark chocolate (70% or more) along with 180 gr. of butter.
2- In the meantime, roughly break 10 to 12 petits beurres cookies. (You can also use “galletas marías” if you are in Mexico.)
3- Once it is melted and smooth, take it out of the bain marie and mix in one by one (mixing well each time): (1) one cup of sugar, (2) three quarters of a cup of sifted flour with a pinch of salt, (3) four eggs (one by one).
4- Gently add the cookies and mix.
5- Place in a prepared baking dish and bake for 45 minutes at 180º C. (medium oven).

Serve once it has cooled, with fresh fruits on the side.
