Bell peppers “sautés”

A simple and fast recipe to serve bell peppers with just about anything: pasta, rice, as a side dish, alone or as one of the ingredients for a salad. Bell peppers are packed with vitamins and they taste wonderful. I prefer to use organic ones, and any color or combination thereof will do (the yellow ones tend to be sweeter though).


1- Wash and cut the bell peppers in thin slices (circles). Cut each circle in half. Take out the seeds.
2- In a little bit of olive oil, fry some garlic. When the aroma starts to rise, add the bell peppers, fresh herbs of choice (oregano, mint, rosemary, etc.) and freshly crushed black pepper.
3- Let it fry on low fire so that the bell peppers release their sweetness.

Serve hot or cold.
