Fish with ginger curry marinade

Nice flavour and colour! A healthy alternative too.


1- In a bowl, mix some olive oil, freshly grated ginger, some lemon juice and a teaspoon of curry.
2- Brush the fish filet (white, light and flaky preferably) and let it soak in the marinade for at least 30 minutes, covered and in the fridge.
3- Cook in a medium to hot oven (about 180 to 200 degrees C.) for about 20 minutes. Preferably cover the dish with aluminum foil while in the oven so that the fish does not dry.

Sprinkle with cilantro and serve. It goes well with white rice, green vegetables and a few slices of lime on the side.
