Petites pommes de terre à l’ail et au romarin

A lovely easy potato recipe made with young little potatoes.

1- Wash the small potatoes. Peel if you feel like it. I did not.
2- Place a generous amount of water in a pan and place the potatoes, then boil the water (you get less starchy potatoes this way). Boil until the potatoes are cooked.
3- Put the potatoes through a colander then toss in a bowl with crushed garlic, fresh rosemary and freshly ground black pepper. (no salt – it would ruin the taste of the potatoes.) If the potatoes seem to large to you, cut them in half or quarters.
4- In a deep pan, place some olive oil and when it boils add the potatoes. Fry lightly for about 15 minutes tossing carefully from time to time.

Serve in a bowl sprinkled with roughly crushed sea salt.
