Tagliatelle con calamari

This was simply delicious! Try it, it is easy to make. Just make sure all the ingredients are very fresh.


For 500 gr of fresh calamari
1- In a large pan, place some olive oil and fry lightly five cloves of garlic crushed and a mix of Italian herbs (oregano, parsley, basil, etc.). Add salt and pepper to taste.
2- Add one kg of fresh tomato pulp and let it simmer for about 20 minutes.
3- Add the calamari, mix well and let it cook for a maximum of 15 minutes. Any longer and the calamari would become chewy.
4- Serve with your long pasta of choice (Tagliatelle or Fetuccine) and top with freshly grated Parmigiano and some chill if you so desire.
