Fluffy pancakes with cream

A delicious idea for fluffy pancakes. Serve them with honey, or Nutella, or homemade jam, and fresh fruits.


1- In a large bowl, gently mix one cup of sifted white flour, half a cup of sifted whole wheat flour, two teaspoons of baking powder, a generous tablespoon of honey, a pinch of salt, the yolk of three eggs, one cup of cream and the juice of half a lemon.
2- In a separate bowl, whisk the whites of the three eggs until stiff. Fold them delicately into the pancake mixture. If you feel the mixture is too thick, just add a little bit of milk.
3- Cook gently on low fire in a pan, turning over once.
