This late afternoon, with temperatures dipping low, and a few organic apples at hand, I made these lovely muffins. The secret – beat the eggs white stiff. Here is the recipe.
1- In a medium bowl, beat three egg sites stiff.
2- In the meantime, melt 40 gr of butter and let it cool.
3- In a large bowl, mix one and half cups of sifted flour, one and half teaspoons of baking powder, a pinch of salt, two generous tablespoons of brown sugar, one quarter cup of milk and three egg yolks.
4- When it is all mixed (it will be a bit stiff) add the butter and mix again thoroughly. Then add the egg whites.
5- Mix in gently three medium apples cut in cubes.
6- Bake for 25 minutes at a 180º C. oven. It smells delicious while it bakes!
