Penne rigate con pomodori freschi e prosciutto

Just the perfect colours for the season!


1- In a large serving bowl, place fresh tomatoes cut in small cubes. Add coarse salt, freshly ground pepper and Italian herbs of your liking. Add some high quality olive oil and toss.
2- In a small pan, fry some crushed garlic in very little olive oil. Once they start to turn a little brown, immediately pour all of it in the large bowl with the tomatoes. Mix well and set aside for at least 30 minutes. This will enable the full flavour of the tomatoes to be released.
3- Cook the pasta per indication.
4- Once the pasta is done, mix it with the tomatoes and add shreds of prosciutto. Top with parmeggiano shavings and serve.
