With this season being rather busy, you may want to try this delicious tomato sauce for pasta. It takes just a few minutes and its aroma and color are just perfect for the season.
1- In a large pan, place some olive oil. Drop some crushed garlic and let it fry a little.
2. When the garlic start releasing its aroma, just add as much tomatoes as you want. Use fresh tomatoes cut in slices. Leave the skin on. Add a bunch of Italian herbs, either dry or fresh. Here I used a mixed of dry Italian herbs (oregano and thyme) with fresh rosemary. Add fresh crushed pepper and sea salt to taste.
3. Mix well so that the tomatoes are well coated with the herbs. Cover, and let it simmer maximum 15 minutes. During that time, cook the pasta.
