Muffins aux myrtilles by Cook & Fun

A lovely recipe from Cook & Fun (here) inspired these blueberry muffins made with organic blueberries. They were delicious! Thank you Cook & Fun.


1- In a large bowl mix: two cups of sifted flour (250 gr), one tablespoon of baking powder, one third of a cup of brown sugar, a pinch of salt, 20 cl of milk and the yolk of one egg.
2- Apart melt 100 gr of butter and let it cool.
3- Beat the white of one egg until stiff.
4- Mix the melted butter with the flour mixture. Then gently fold the egg white and finally about 200 gr of fresh blueberries.


5- Place in a prepared muffin baking pan and bake for 20 minutes at 190ºC.
