Rice with raisins and cranberries

Colour is always of prime importance at our table. So here is a colourful and flavourful way to make rice.

For one cup of high quality Basmati rice.
1- Wash the rice thoroughly until the water is clear.
2- Wash the raisins and the cranberries briefly and mix with the rice.
3- Bring two cups of water to a boil, mix in the rice and let it simmer on very low fire covered for 20 minutes (or 25 to 27 minutes if you are at high altitude as in San Miguel de Allende).
4. When it is done, uncover and fluff with a fork. Serve a few minutes later.
