White fish with honey-tomato sauce

This was delicious! The honey gives it an amazing taste. I was inspired by a Moroccan recipe my grandmother used to make, and just simplified it so that it can be made about 20 minutes before serving.


For one filet of white fish
1- In a pan, place a little bit of olive oil, two cloves of garlic crushed or cut in thin slices, a teaspoon of cumin, a teaspoon of turmeric and some fresh ground pepper. Mix and when the garlic starts releasing its aroma, add one tablespoon of honey and mix well.
2- Place the filet of fish and ten sherry tomatoes cut in half.
3- Cover the pan and let it simmer for about 15 minutes. Pour some of the sauce unto the fish every 3 minutes or so to make sure it cooks well. Do not move or turn the filet.

I served it with broccoli al dente and a few leaves of fresh basil. It goes very well with white rice as well.
