Lemon and dried fig cake

Just like the name says – easy and very light!

1- Gently mix, first the dry ingredients: one and half cup of flour, half a teaspoon of baking powder and a pinch of salt.
2- Add one by one the other ingredients: one tablespoon of honey, a quarter cup of olive oil, half a cup of milk, one large beaten egg .
3- Finally add one and half cup of diced dried figs (do this at the very end so that they don’t sink in the batter) and the zest of half a lemon.
4- Bake in a 180 degrees C. (350 degrees F.) for about 40 min.
