If you are tired of your usual fried chicken, try this! I made it with chicken breast and it works for other chicken parts as well.
This recipe is for one large chicken breast, no skin, no bone, flattened.
1- In a bowl mix: one cup of plain yoghurt, two teaspoons of curry powder (preferable Madras curry) and two crushed garlic cloves.
2- Place the chicken breast cut in large parts and let it marinade for just a few minutes.
3- Put some flour on a plate and place the chicken one piece at a time, covering them lightly with the flour.
4. Fry in a shallow pan with olive oil, turning the pieces over only once. It takes about 15 minutes for the first side, and 10 minutes for the other one.
5- Pat a little bit with a napkin before serving and sprinkle with fresh mint leaves.
I served it with basmati rice cooked with turmeric and raisins, and some avocado on the side.
