A fabulous way to make full use of peaches! We are in full season here in Mexico, and they are juicy and sweet as can be.
1- In a large bowl mix: two cups of sifted flour, a tablespoon of baking powder, two and half tablespoons of brown sugar, two eggs, one pot (200 ml) of fresh cream and 40 gr of melted butter. Mix well.
2- Gently add about four peaches cut in very small cubes.
3- Bake in a muffin baking dish for 25 minutes at 175ºC.
