Apple cake from Tuscany – a a very light (no butter, no sugar), healthy and really good cake. Delicious the day after, keeping it covered in the fridge, and wonderful for a kid’s lunch box!
1- Soak about one third of a cup of golden raisins in warm water while you prepare the cake.
2- Peel and slice three medium apples.
3- In a large bowl, beat three eggs by hand. Add half a cup of milk, one teaspoon of vanilla extracts, one cup of sifted flour, a pinch of salt and about a quarter cup of pine nuts. Add the raisins at the very end.
3- In a prepared baking dish, put the batter and place the apple slices very close together forming a large circle towards the rim, than a smaller circle on the inside.
4- Bake for 30 to 40 minutes in a 190 degrees C. (375 degrees F.) oven. Let it cool before serving.
