We love lentils in our house, so I am always looking for new recipes. Here a really tasty one with a little twist – it has honey!
1- In a large pan put some olive oil and fry some crushed garlic and shredded fresh ginger root. Add a cup of lentils, fresh herbs (basil, mint, cilantro) and fresh crushed pepper. Mix while the lentils cook a little, about five minutes.
2- Add some green olives pitted and cut in half (the reason why no salt is needed), the juice of one lemon and a tablespoon of honey. Mix again then cover with water.
3- Let it boil then simmer until cooked. About 45 minutes. Add water if you see the lentils are drying.
4- Serve topped with pine nuts. It is delicious!
